Armenians actually don't use honey at all. it's like 1.5 cups sugar, 1 cup water and some lemon or orange rind and a squirt of juice to taste, boil for a minute or two longer after the sugar dissolves. The key bit is making sure the syrup is room temp before adding it to hot baklava or it makes the baklava come out like soggy newspaper. And the finely chopped walnuts I just buy in the baking section as is because I'm a lazy son of a bitch
